La Tortillería de Nicoya is one of a chain of purely Costa Rican restaurants scattered across the country. Eating at any of the Tortillería restaurants is a wonderful way to experience Costa Rican culture and cuisine at the same time. The restaurant’s founders called this “Living Tradition”, with a menu that preserves typical dishes and weaves them from the past and into the present and future. Curiously, the founders were a couple of young Costa Rican entrepreneurs who were given the task of rescuing the living traditions through one of Costa Rica’s typical dishes: the tortilla. The assignment became a business adventure that succeeded in preserving many local dishes native to different areas of Costa Rica and linking the local tortilla with its community. © La Tortillería de Nicoya
