Le Bistrot Viet has as its origin the meeting between Gaëtan Eonet, Chef and owner of the “Bistrot de Gaëtan” in Providencia, Santiago de Chile and Kim My, a gastronomy consultant, daughter of a Vietnamese mother and Laotian father.
