UNIVERSE RESTAURANTS: The Accesible Universe Foundation together with the disciples of the Grand Chef Santi Santamaria will work together in the first Restaurant "Universo Santi", with which it is intended to train and employ people with disabilities in occupations related to haute cuisine.

The purpose of the "Restaurante Universo Santi" is to contribute to the improvement of the quality of life of people with Down syndrome and other disabilities, lacking professional qualifications recognized by the system of vocational training for employment or the education system .

It will be a tribute to the family, friends and disciples of the great Santi Santamaría, who was one of the most outstanding figures of Spanish gastronomy at the end of the 20th century and the beginning of the 21st. A great chef and director of prestigious restaurants all over the world, Santamaría was the first Catalan to achieve the 3 Michelin stars with the local Can Fabes and the first Spanish chef to get 7 stars among all its premises.

Born in Sant Celoni, province of Barcelona, ​​in July 1957, Santamaria was a brilliant man, an industrial expert and self-taught in the kitchen, which is surprising if we consider everything he achieved in his career as a chef.

His most famous business is the first he opened with his wife, Àngels Serra, in 1981; Can Fabes. With it he achieved some of the most notable successes of his career. This restaurant belonged, as Relais Gourmand, to the Relais & Châteaux group composed of luxury hotels and restaurants.

But behind the name of the missing cook, there is a group of great disciples and heirs of the kitchen of the great Santamaria, such as Óscar Velasco, Ismael Alegría, Ismael Delgado, Daniel Chávez, Iván Solà Baqueró, Abel Valverde or his own daughter Regina Santamaría, who they will collaborate in the Santi Universe Restaurant, which will also have the invaluable collaboration of the National Federation of Autonomous Workers' Associations and the Confederation of Employers of Cádiz, which will provide us with facilities for the formation of the team.

Also, some of the best artists in the country, will collaborate, among other professionals and creators, in the decoration of the interior of the restaurant and in its image, which will also be a "worth visiting space".

Many personalities and institutions, in love with the project, participate in the Board of Trustees of the Foundation, in which the widow of Santi Santamaría, Angels Serra and her two Sons will occupy a prominent place.
