Founded in 1936 by 7 eminent chefs from the Lyonnaise region, the Les Toques Blanches association was created with the aim of bringing together Lyon chefs passionate about their profession and anxious to promote Lyonnaise gastronomy.
While the main objective was to favor local know-how and the use of local products, it was no less important for each of the members, who became more numerous, to promote the learning of future chefs. become and ensure the development and defense of the cuisine and pastry of Lyon while maintaining local traditions.
The greatest ones have associated themselves with these ideals like notably Pierre BLANC, Pierre ORSI, and many other notable figures of the Lyon cuisine. Many successors have relied on the precepts of the association to become in turn the representatives of gastronomy. With today nearly 110 members, the association represents to the general public a pledge of quality and seriousness.
