Sargo Madrid

Sargo is a Mediterranean market restaurant where tradition is more important than the avant-garde, and where the protagonist of each dish is the product itself, well treated and well executed, in very careful presentations. The fish and shellfish are bought directly from the Galician fish markets the previous afternoon to be cooked and served on the plate, and the meats are bought directly from a slaughterhouse that serves restaurants that hold Michelin Stars.
